"Shinonome" 240mm (9.45in) gyuto chef knife. Boasting a more sophisticated look than Black Gold, this knife features a dichromatic wa-style polyurethane resin handle. The top of the handle is gold leaf flake, swarming around the tang. The persistence of the gold leaf continues toward the butt of the handle, but halfway through the content is dominated by swirls of a dark, satin-like resin. The blade is made from molybdenum vanadium [stainless] steel, which is a mid-grade stainless steel hardened to HRC 57. Nothing fancy, but gets the job done, won’t rust, and easy to sharpen. You won't have to baby this knife. The edge angle is sharpened to 15 degrees and stropped for a razor sharp edge. Full flat grind (tapers from spine to cutting edge). The blade is 8.25” (210 mm) long, 1.81” (46 mm) tall, & 0.092” (2.35 mm) thick at the spine with a distal taper (gets thinner as it goes to the tip). Total length of the knife is 14.37” (365 mm).⠀
